This was delicious! The ideal minestrone, in my opinion, was a soup served at Pagliacci’s, an Italian restaurant in Denver that sadly, closed after many years in business. This comes amazingly close and I am sure it will be even better tomorrow. Husband, son, and son’s friend really liked it.

Minestrone is such a great soup to use a ton of veggies in. We went and picked some tomatoes to roast combined with those from our garden – had to make sure we’ll have enough for all the good recipes like this one throughout the winter season. One of our freezers is almost full of tomatoes. I’ll most likely use this recipe for our annual “soup night” we do with our across-the-road neighbors. I generally make 3-4 different soups along with different muffins and breads. It’s a really fun way to get together without there being a bunch of stuff to do – everything is ready to go!

We loved this! I had a small amount of frozen chopped spinach that I tossed in but that was the only change. Delish!
