We all know that chocolate and peanut butter make magic together, and my Buckeye Cookies take that magic to the next level. These irresistible cookies are the perfect blend of sweet and creamy that’s sure to steal the show at any gathering. They’re ridiculously easy to whip up and absolutely addictive.

These Buckeye Cookies are my holiday go-to for spreading sweet cheer without breaking a sweat in the kitchen. They’re rich, creamy peanut butter balls dipped in luscious chocolate, just like the classic buckeye nut. They’re not only incredibly easy to make but also the perfect treat to share with friends and family during festive gatherings.

Before You Start

  1. Soften Your Butter: Make sure your unsalted butter is softened to room temperature. This allows you to blend smoothly with the peanut butter, for that  creamy mixture without lumps.
  2. Sift the Powdered Sugar: Sifting the powdered sugar removes any clumps, ensuring your dough stays smooth and your cookies have a perfect texture.
  3. Chill the Dough Properly: After shaping the dough into balls, freeze them for at least 30 minutes. This firms up the peanut butter, making it easier to dip into the melted chocolate without it melting or losing shape.
  4. Prepare Your Workspace: Line your baking sheet with parchment paper before shaping the dough. This prevents the cookies from sticking and makes cleanup a breeze.
  5. Melt Chocolate Correctly: When melting semisweet chocolate chips, use a microwave-safe bowl and add 1 tablespoon of shortening if you want a smoother finish. Stir in 30-second intervals to avoid burning the chocolate.

Ingredients You’ll Need

  • Peanut Butter: You’ll need creamy peanut butter for these cookies. If you’re allergic to peanuts, you can substitute it with almond butter or sunflower seed butter.
  • Unsalted Butter: You want to make sure the butter is softened because it blends seamlessly with the peanut butter, creating a creamy and stable base for your cookies. If you only have salted butter on hand, simply reduce the added salt in the recipe to balance the flavors.
  • Vanilla Extract (Optional): Adds a subtle depth and enhances the overall flavor of the peanut butter mixture.
  • Powdered Sugar: Sweetens the dough and helps bind the ingredients together, ensuring a smooth and cohesive texture.
  • Semisweet Chocolate Chips: Feel free to use dark chocolate or white chocolate chips if you prefer.
  • Shortening (Optional): Adding a tablespoon of shortening to the chocolate helps achieve a smoother and more fluid consistency, making it easier to dip the cookies. If you’d rather not use shortening, coconut oil is a great alternative.

How To Make Buckeye Cookies

Combine Peanut Butter, Butter, and Vanilla

Combine 1½ cups of creamy peanut butter, ½ cup of softened unsalted butter, and 1 teaspoon of vanilla extract in a large mixing bowl. Use an electric mixer on medium speed to blend them until the mixture is smooth and creamy.

Gradually Add Powdered Sugar

Slowly add 3 cups of powdered sugar to the peanut butter mixture, stirring continuously until a stiff dough forms. The dough might seem crumbly at first, but keep mixing until it comes together nicely.

Shape the Dough into Balls

Use a small cookie scoop to portion the dough into 1-inch balls and place them on a baking sheet lined with parchment paper. Once all the balls are shaped, transfer the baking sheet to the freezer and let them chill for at least 30 minutes to firm up.

Melt the Chocolate

In a microwave-safe bowl, combine 2 cups of semisweet chocolate chips and 1 tablespoon of shortening (if using). Microwave in 30-second intervals, stirring in between, until the chocolate is fully melted and smooth.

Dip the Peanut Butter Balls

Using a toothpick or a fork, dip each chilled peanut butter ball into the melted chocolate. Make sure to leave a small portion of the peanut butter visible at the top to resemble a buckeye. Place the dipped cookies back onto the parchment-lined baking sheet. Remove the toothpick and gently smooth over the hole if desired. Let the chocolate set at room temperature or place them in the refrigerator until the chocolate is firm.
